Spring POP of Neon

Happy Tuesday! I hope you had an amazing holiday. I know I did:-) I am officially sick of barbecue now. I definitely ate way more of it than I should have, but every single bite was delicious! I am excited about a trip to visit family, which will force me to slow down.  My little one and I are counting down the days:-)

I am looking forward to trading Southern California for a temporary Southern Sabbatical in Louisiana where all I do is play with my son,  swing on a porch swing while we sip lemonade  and watch butterflies having fun. And our trip would not be complete without us  eating lots of Blue Bell Ice Cream. And as much as I love to cook, I am looking forward to having someone cook for me:-)

Today My ensemble is simple with the accessories front and center. I don't think you can ever go wrong with a pair of great jeans and a white top. It is the perfect canvas for bold bright accessories. Timeless and classic style with fun funky accessories!

Do bright colors make you happy?

Sometimes you gotta just go with the flow:-)

Orange + Polka Dots

Happy Friday loves! I am so excited about this holiday weekend.  It means eating slabs of ribs dripping with barbecue sauce, grilled burgers and dogs, picnic potato salad and laying under a tree in the park. YAY! And of course recognizing that the day is about more than barbecue, but about taking a moment to recognize the brave men and women who gave the ultimate sacrifice for our country.

I am super excited to have been featured on the fabulous Oh To Be A Muse Blog. I want to thank Cheryl, the lovely woman behind this wonderful fashion blog. You can see the feature here. And of course, I would be thrilled if you head over there and show me a little love:-)

I love the color orange and if you have been following for a while, you know that orange gets lots of play in my wardrobe.  I paired this cute little H&M orange dress with some splashes of black and white. for some reason polka dots always put me in a good mood.   Stay tuned for some fun changes I am making to my blog.  I think you will love them!  So, what are you doing this holiday weekend? I plan to have my face in a plate of barbecue real soon and me and my little one will be off on one of our adventures this weekend:-)

Strawberry Cheesecake Chimichangas

Spring is the perfect time to indulge in desserts made with strawberries. This time of year they are plentiful, big, juicy and ripe! This strawberry cheesecake chimichanga is a playful twist on the traditional Mexican chimichanga.

Fresh strawberries come together in a delicious strawberry coulis and adorns the sweet crunchy tortilla dusted with cinnamon and sugar and filled with sweet creamy cheesecake filling.  This unique dessert is the perfect ending to a delicious meal.

This all starts with fresh strawberries. After the strawberries have sat in orange juice and sugar they are blended to create a strawberry coulis.

A hint of cheesecake filling  peaking out.

Cinnamon, Sugar, Strawberry Coulis = Delicious!

I hope you don't need more convincing

Ingredients

1 8 oz block of cream cheese, softened
5 Tablespoons powdered sugar
2 teaspoons vanilla
1/2 tsp cinnamon
4 flour tortillas (soft taco size)
1 quart strawberries, washed and sliced
½ cup orange juice
1/2 cup granulated sugar

2 to 4 cups canola oil, for frying
*toothpicks, for securing
*additional mix of cinnamon and sugar, for sprinkling (about 1/4 cup sugar and 2 tsp cinnamon, mixed)

Directions

Toss the strawberries with the sugar and orange juice. Cover and let sit at room temperature for at least 30 minutes.

After the berries and sugar have macerated and become very juicy, remove 1/2 of the berry mixture, put it in a food processor and puree until smooth. Return it to the rest of the berries and reserve until ready to use.

Pour oil in a deep sided fry pan and heat over med/high heat. While oil is heating, mix together the softened cream cheese, powdered sugar, and vanilla in a small mixing bowl. Mix by hand or until smooth.  Spoon about 1/4 cup of cheesecake mix on to the middle of the tortilla. Fold and tuck to form a burrito, making sure filling stays inside. Secure with 1-2 toothpicks along the seam. Place chimichangas into the oil. Sprinkle lightly with cinnamon and sugar and lightly fry. Remove from oil sprinkle with additional cinnamon sugar and drain on paper towel.

Spoon strawberries  and fresh strawberry coulis over each chimichanga and serve.

Walking on Sunshine

Happy Friday! Sunny skies and warm breezes in my neck of the woods. This is definitely the season for bold bright colors.  I have been busy in the kitchen making some amazing bold bright foods too!  Expect some amazing recipes perfect for this time of year. Even for those that don't like to be in the kitchen, I have some super easy recipes for you too:-) I am a busy single mom, so I know what it is like to have a lot to do and very little time.  But even so, you still need to be eating well, right? Right!

What are your plans for the weekend? I have a couple of events to go to and am looking forward to one of my food adventures as I explore a new eatery this weekend. My social calendar is pretty full these days, but I am not complaining. Today I am wearing a white blazer and a light breezy tank with jeans and bold accessories. What I like about this look is that when I am busy running around with my son, I can swap my  pumps for a comfy pair of flats and no style is lost.
