Pomegranate Apple Salad



Pomegranate and apple is such a delicious combination. Paired with Arugula and light Vinaigrette, it makes and absolutely amazing salad. Inventive salads make clean eating easier and tastier. Combining fruits and different types of salad greens takes the boring factor out of salads. Pomegranate has lots of antioxidants, is good for your and adds a delicious crunch to salads.



Salad Ingredients

1 Apple
4 Cups Arugula
1/2 Cup Pomegranate Seeds
2 1/2 Tablespoons Apple Cider Vinegar
1 Tablespoon Honey
6 Tablespoons Olive Oil

Directions
 
Cut the apple into quarters, leaving the peel intact. With a paring knife, remove the core from two of the quarters and slice apples as thinly as possible. Squeeze lemon juice over apples to keep them from discoloring.
 
In a small bowl, combine the vinegar and honey. Whisking constantly, slowly drizzle in the olive oil. Season dressing to taste with salt and pepper.

When ready to serve, toss the arugula and the apples with just enough dressing to coat the leaves. Divide the salad among four plates. Sprinkle each salad with pomegranate seeds
