Pumpkin Bread


 Pumpkin Bread is one of those things that always makes me think of autumn.  I used to go to Monastery of the Angels in Los Angeles where the nuns  sold the most amazing pumpkin bread and I would buy it year after year and then I yearned for the pleasure that came with baking my own.  The scent of cinnamon, cloves and nutmeg wafting through the air and my whole house smelling sweet and warm and like autumn. This pumpkin bread is moist, spicy and has just the right amount of sweetness. 

Moist and amazing and perfect for a Thanksgiving brunch



Ingredients

    1 (15 ounce) can pumpkin puree

    4 eggs

    1 cup vegetable oil

    2/3 cup water

    3 cups white sugar

    3 1/2 cups all-purpose flour

    2 teaspoons baking soda

    1 1/2 teaspoons salt

   1 teaspoon vanilla    

    1 teaspoon ground cinnamon

    1 teaspoon ground nutmeg

    1/2 teaspoon ground cloves

    1/4 teaspoon ground ginger


Directions

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.


    In a large bowl, mix together pumpkin puree, eggs, oil, vanilla and water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.


    Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

Mmm! Pumpkin bread is one of my favorite things in the world. I've never been much of a bake (though I can cook), but maybe this will be worth a try.

Thanks for sharing! I love baking though I try not to (gotta either have a football team of kids to eat all the baked goods, or commit to a lifetime of cake-related large-booty-itis).

Pumpkin is one of my favourite seasonal ingredients to cook with, but we can't get the canned puree over here, so I have to make it myself from an actual pumpkin. This recipe looks great though, may tempt me away from the usual rosemary-roasted pumpkin wedges, or pumpkin soup :-)
