The best Mexican restaurant style salsa!


 There is something about great salsa and chips. Have you ever had  salsa that was so good the server had to refill your salsa bowl a few times before your food arrived? I was really stunned at how deceptively simple it is to make a great salsa at home. This recipe was given to me by a restaurant I used to frequent in my old neighborhood.  The great thing about this recipe is that you probably already have most of the ingredients in your pantry or refrigerator. This can be prepared and in your mouth in less than 15 minutes, unless you have to run to the store and get the ingredients:-)

This also makes a great topping for seafood, chicken, or your eggs in the morning. This is the perfect condiment and this recipe makes a large amount, so it is great for parties or putting in cute little mason jars and giving to your friends.

This is bright and fragrant and full of flavor. Try not to drink it.. It is that good.

Ingredients

28-ounce can whole tomatoes (peeled) with juice
2 10-ounce cans Rotel (diced tomatoes with green chilies)
1/2 cup chopped green onion
1 clove garlic, chopped
1 jalapeño, quartered and sliced thin
1 cup cilantro
Juice from ½ a fresh lime
1 teaspoon kosher salt
1/2 teaspoon granulated sugar
1 teaspoon ground cumin

Directions:
Add all ingredients to a food processor or blender. Pulse until you get desired consistency and make sure you don't pulse too much or you will get liquid, especially if you are using a blender. Refrigerate for at least one hour, and then serve with your favorite tortilla chips.

Now is the perfect time to whip up a batch of margaritas to enjoy with your chips and salsa. Bon Appetit!
