7 Layer Dip

I love a good dip.  There are some dips that are so delicious and filling that you can make a meal out them.  This 7 Layer Dip is definitely a dip that is tasty and satisfying and perfect for those days in summer when you don't feel like turning on the stove. What I love about this dip is that it is perfect for parties and potlucks. I usually make this in a large dish, but this works fantastic in individual servings too.  Use the freshest ingredients you can find and this will be a hit everytime:-)

Everything is a little better with cheese, right?
Fresh tomato, green onion, cilantro and avocado make this extra delicious

Chop the veggies and set them  aside for a moment

Start with a layer of refried beans and spread it in a dish or layer in glasses if you are doing individual servings

The next layer is guacamole made from the fresh avocados with a hint of cilantro, tomatoes and green onion

A layer of sour cream mixed with cream cheese and taco seasoning adds a bit of tang and great flavor

And that gets topped with a mixture of Roma tomatoes and your favorite chunky salsa

Add a generous sprinkling of shredded Monterey Jack and Cheddar

And now add black olives and more cheddar cheese

And here is the end result:-) Of course, the larger pan will not look like this, but you can get a similar effect with a trifle bowl.

Ingredients
1 Package Taco Seasoning Mix
1 16 ounce can refried beans
1 8 ounce package of softened cream cheese
1 8 ounce container of sour cream
1-2 cups guacamole  (recipe here, or you can just mash your avocados and season with lime juice, cayenne and salt)
1/2 cup chopped cilantro
1 cup chunky salsa
2 Roma Tomatoes diced
1/2 bunch chopped green onions
1 can sliced black olives drained
1 cup shredded Mexican Blend Cheese
2 cups shredded cheddar Cheese

In medium bowl, mash the avocados, stir in lime juice and salt and then mix in garlic, cilantro, pepper and salt
Dip Directions:
In a medium bowl, mix half the taco seasoning and the refried beans. Save the remaining taco seasoning and spread the bean mixture onto a serving platter or layer it in an 8 ounce tumbler for individual servings.
Combine the remaining taco seasoning with the sour cream and cream cheese and set aside.
Add the guacamole layer. Next, spread the sour cream layer over the guacamole.
Mix the chopped Roma tomatoes with the chunky salsa, green onions and cilantro. Add the tomato layer over the sour cream.
Add the cheese and olives. If you are making individual servings, use approximately 2 generous tablespoons of each layer.
 Bon Appetit!

I think this has to be my favourite dip. I've never actually made it myself and I don't buy it very often because of the high cost in the store. So it's great to have a recipe I can now use!

That's such a pretty looking dip that it's great you served it in clear glasses so all seven layers can be seen. I can imagine this disappearing very quickly especially if served to a bunch of hungry teenagers xx

Looks delish! My aunt recently made a layered dip and put the dip into little individual shot glasses - good for a party, since the dip often turns into a bit of a mess after everyone is digging into it!

Seven layers is my absolute favorite. I only make it twice a year though.
