The Most Amazing Green Salad Ever

Clean eating is essential to a long healthy life, but sometimes clean eating is a challenge. The key to living healthy is finding that balance between enjoying the foods you love and making the foods that are good for you fun and interesting. Green salads do not have to be boring. With the right ingredients, a green salad bursts with flavor!

Green salads are a great way to eat a nutritious meal and get lots of great antioxidants. A green salad is intriguing when you add a bounty of fresh green fruit.  This salad was created in my kitchen with fresh ingredients I had in my kitchen from a recent visit to the farmers market.  Romaine lettuce, honeydew melon, green apple and kiwi with a honey lime dressing and lime jello bits make this a delicious and very nutritious salad. Sweet, tart and
absolutely sublime.

Clean eating does not have to be boring

Fresh Kiwi is amazing in a green salad

Ingredients
Green Grapes
Granny Smith Green Apples
Kiwi
Honeydew Melon
Romaine Lettuce
Lime Jello

Dressing Ingredients
Juice of two limes (about 1/3 cup)
1/3 cup honey
1 tablespoon finely chopped mint (8 to 10 large leaves)

Directions
Wash and dry fruit, romaine lettuce and put aside. Prepare lime jello per instructions on package and pour liquid into ice cube tray or any type of small jello molds.  Let jello set.

In a small bowl whisk the lime juice, honey, and mint together. Drizzle over fruit and romaine lettuce and toss lightly. Add lime jello pieces into the salad.  Serve Chilled.

Do you like to add fruit to your green salads?

Granny Smith Apples add a great tart, crunchy element to salads

Going green is easy when it tastes so fresh and delicious!

LV, this looks so delicious! I love how you incorporated the fruit (especially two of my faves- kiwi and honeydew melon) into the salad. I will be stealing this recipe from you and using it this week ;-)

Your food (as well as your fashion & flows) always inspires me! Thanks for sharing, darling!

I often put citrus or other fruit in my salads but I've never put kiwi in there. It's easy to grow here too so they're not expensive. I must try this soon.

Oooh this looks sooooooo good! The granny smith is my fave apple and I love green grapes. I have been murdering the Wendy's berry and almond salad as if late. I have it at least twice a week...at least.lol. Then it occurred to me that I could make it myself. I was one never to put fruit in my salad until recent so it really never occurred to me...duh. Well, I made it and it was good! Now I will try this soon. Thanks for the recipe!
