Peach Cobbler


When it comes to comfort desserts, Peach Cobbler is at the top of my list.  The scent while this is cooking will drift throughout the house and greet your guests right at the door:-) It is simple, comforting and DELICIOUS. The perfect hint of cinnamon, nutmeg and good ol southern comfort. 


I want you to see how crazy delicious this is! Look at those peaches swimming in that cinnamon and nutmeg infused juice. Sweet juicy goodness that is so perfect served warm with a scoop of ice cream. Ready to make peach cobbler? Lets Go!

Ingredients

1 large can (29 ounces) peaches in light syrup
1/3 cup brown sugar
1/2 cup white sugar (you can use 1/3 if you prefer it less sweet)
1 teaspoon cinnamon
1 teaspoon nutmeg
4 tablespoons butter
1 teaspoon cornstarch

Mix all ingredients and put in a large pot. Bring to a boil and reduce to low simmer for 5-10 minutes.  Put Aside. Preheat oven to 375

For Crust
  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water
 Shortcut option

If you do not have the time to make the crust from scratch. You can buy frozen pie shells, let them thaw and then cut into strips and cover the peaches. Sprinkle the top with two tablespoons sugar mixed with 1 teaspoon cinnamon.

 Crust Directions

Combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

Pour peaches in a 2 quart baking dish or a 13x9 pan.  Drop spoonfuls of topping over the peaches. For the final step, mix 2 tablespoons sugar with a teaspoon cinnamon and sprinkle over the entire top of cobbler.  Bake approximately 30 minutes or until topping is golden brown and peaches are bubbling hot. Serve with a scoop of ice cream!
