Orange Crush

Orange is a bold and fiery color.  People either love it or hate it. I belong to the LOVE IT! camp.

I went a little matchy matchy with this ensemble, but the blue leggings provide a nice color contrast.

Vegetarian Tortilla Soup

There is something so warm and comforting about a bowl of tortilla soup. Its the perfect
dish to make you feel warm and tingly inside when its cold outside.
2 Tablespoons vegetable oil
1 package frozen pepper and onions
2 cloves minced garlic
3 tablespoons ground cumin
1 28oz can crushed tomatoes
3 (4 ounce cans) vegetable broth
salt and pepper to taste
1 can whole kernel corn
12 ounces tortilla chips
1 cup shredded cheddar cheese
1 avocado peeled pitted and diced

Heat the oil in a pan over medium heat. Stir in the pepper, onion, garlic and cumin and
cook for 5 minutes until vegetables are tender.Mix in the tomatoes and chili peppers. 
Pour in the broth and season with salt and pepper. Bring to a boil, reduce heat to low and 
simmer for 30 minutes.

Mix corn into the soup and continue cooking 5 minutes. Serve in bowls over
equal amounts of tortilla chips. Top with cheese and avocado.

I LOVE YOUR BOOTS although I was seriously distracted by that delicious soup. Tortilla soup is like my all time favorite, especially with extra cheese, extra sour cream and extra avocados! YUMMY!

i'm so glad you posted a vegetarian tortilla soup recipe, because i'm a vegetarian and most versions have meat!
