Salmon Kale Tacos

Kale

Good ol Kale...

The beloved cousin to Collard Greens makes a lot of appearances in my kitchen. Kale is robust, healthy and marries well with just about anything else in the kitchen. Did I mention that it's really healthy?
I just love a good taco and usually my shells are lined with iceberg lettuce, cheese and tomatoes, but one day I experimented by swapping out my usual ground turkey for Salmon and my usual iceberg lettuce with Kale. The result was unexpectedly delicious and the robust flavor from the Kale and my Siracha Crema made the tacos extra tasty. I love a little extra crunch, so I served them with a side of fresh radishes.

Kale has a rougher grittier texture than other greens, so massaging them with Aioli, Crema, salsa or your favorite condiment helps. My favorite trick is to put the hot salmon on the kale to slightly wilt and soften it. This works out perfectly for tacos because you don't want the kale to be rough and overpower your other ingredients.

Are you ready to try some Salmon Kale Tacos?

Start with fresh wild Salmon
 
lime
 
Curly Kale

Fresh radishes
Sour Cream
 
 
 Mayonnaise
 
Siracha for a little kick

And Corn Tortillas
 
Ingredients
 
1 pound wild salmon
1 Lime juiced with 1 tablespoon lime zest
3 tablespoons Siracha
1 Tablespoon olive oil (approximately)
Pink Himalayan sea salt to taste
2 cups curly Kale
6 corn tortillas
1/2 cup sour cream
1/2 cup mayonnaise

 
Directions 
 
For Salmon
Preheat oven to 425
 
lightly oil a baking sheet with the olive oil. Mix 1 tablespoon of the siracha, and lime juice and pour over salmon. Sprinkle with a little sea salt and broil for about 15-20 minutes. 
 
For Kale 
 
Rinse Kale and cut into thin shreds. 
 
For Shells 
 
For extra crispy shells, fry them in a bit of oil until crispy. For a healthier shell, spray a baking pan with cooking spray and the tortillas and bake in a preheated oven of 425 for 10-15 minutes.

For the Siracha Crema

Mix the sour cream, mayonnaise and remaining Siracha until smooth and well combined. (you can add more Siracha to make it spicier)
 
Assemble the tacos by filling each shell with flaked salmon, kale, and a generous helping of Siracha Crema. Serve each taco with fresh radishes and your favorite side dish

Sweet n Spicy Siracha Shrimp Tacos


 I never get tired of tacos. I mean never. These shrimp tacos are sweet, spicy and loaded with flavor. Siracha is a spicy Thai hot sauce that makes everything taste a little better. The shrimp combined with a crunchy slaw chock full of fresh vegetables is a perfect meal on its own or served with rice and beans. You can control the level of heat by adding less Siracha. The slaw is meant to be a nice cooling complement to the spicy shrimp and you can adjust the ingredients to your liking to make it more or less creamy.

This all starts with fresh shrimp cooked in a Siracha honey sauce

 Fresh cilantro added to a melange of purple and green cabbage adds a nice layer of flavor

Ingredients

1 pound extra large shrimp deveined
1 tablespoon honey
2 tablespoons Siracha (less if you don't want a lot of heat)
1 tablespoon fresh lime juice
1 garlic clove minced
Skewers for grilling shrimp

Spicy Cabbage Slaw
1 cup fresh purple cabbage shredded
1 cup green cabbage shredded
1/4 cup cilantro
1 teaspoon horseradish
1 teaspoon honey
1 tablespoon sour cream
1 teaspoon mayo
corn tortilla shells 

Directions

In a small bowl, combine the honey siracha, lime juice and garlic. Heat your grill on medium heat. Soak your skewers in water and then thread your shrimp onto the skewers and brush with the siracha sauce and grill each side for 2-3 minutes. When finished add more sauce to the shrimp and set aside.

For the slaw combine the honey, sour cream and mayo in a bowl. If it is too thick, thin out with a fresh squeeze of lime juice or a hint of water. Toss the cabbage into the mixture until well coated.

Fry taco shells, or for a healthier version, spray a baking sheet with non stick spray and mist the tortillas lightly and bake at 400F for approximately 10 minutes.

Fill each shell with shrimp and a generous portion of cabbage slaw.

Torrance Farmers Market



There is only one place where you can get fresh vegetables, candy sweet traditional and exotic, fruit, fresh blooms,  artisan cheese, seafood and any other epicurean treat your heart desires at below market price. if you guessed the farmers market. You are right!  With a variety of farmers markets all over Greater Los Angeles, there is no shortage of farmers markets to experience. The Torrance Certified Farmers Market in the South Bay community of Los Angeles is one of the best farmers markets to experience. Bright and early on Saturday morning, this is the place to be!

The fresh produce is perfect for recession proof shopping. I often buy fresh ingredients here for some of those scrumptious food posts you all love:-) One of my favorite parts of this farmers market is the food court. The roster of food vendors is like experiencing  a culinary world tour and you don't need to live the country! Thai, Chinese, Italian, Mexican, Euro Mexican and everything in between can be found here so make sure you come with the appetite to try some great food and when you get thirsty there are lots of icy agua frescas made with fresh fruit like mango, watermelon, lemon and strawberries  to quench your thirst.
