Southern Peach Wontons



Peach Cobbler is always a crowd pleaser in my family.  I thought it would be a delicious twist on a classic to make crispy wontons with peach cobbler filling on the inside. It is a nice change of pace when you want something a little different, but with familiar flavors. These are best when they are served fresh and warm when they are nice and crispy. A nice scoop of vanilla ice cream makes a nice costar for these delicious little treats.

This starts with a can of peaches enhanced with cinnamon and other fragrant spices along with sugar

Let them cook to a rapid boil and then quickly reduce to a low simmer for 10 minutes. The peaches will get nice and bubbly as they absorb the spices and sugar.

 These wonton wrappers are the base for the peach filling

And your end result will look like this



Ingredients

1 16 oz can of peaches
1/2 cup sugar (plus 2 tablespoons)
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla
2 tablespoons butter
1 package wonton wrappers

Directions

In a small saucepan  over medium heat add peaches, 1/2 cup sugar (reserving the 2 tablespoons for later) add nutmeg, and 1/2 the cinnamon reserving the other 1/2, vanilla and the butter. Stir until butter melts and mixture has come to a boil. Reduce to a low simmer for 7-10 minutes. If your peaches are in slices, use a spoon to break the peaches into chunks. Let the mixture cool.

Take the remaining 2 tablespoon of sugar and 1/2 teaspoon cinnamon and combine in a small cup.

Lay out the wonton wrappers. Drop a tablespoon of peach filling and a little juice on the center of each wonton wrapper. Use your finger or a pastry brush to moisten the edge of the wonton wrapper and fold into triangles. You can also use juice from the peach filling to seal the wontons. Make sure the wrappers are sealed to avoid any leaks. Sprinkle with a little of the cinnamon sugar.

Heat 1″ of canola or vegetable oil in a heavy bottomed pan over medium-high heat to 375°F. Carefully slide wontons into oil and fry for about 2-3 minutes or golden brown on both sides.. As soon as they are golden brown, use a slotted spoon to remove them from oil to a paper towel lined pan. Sprinkle with more cinnamon sugar.
