This recipe originally appeared in my blog last spring, but since it is such an amazing salad and I made it again, I thought this was certainly worthy of a repost:-) And some of you may have missed this recipe the first time around.
This salad is healthy, delicious and quick!
Strawberries add a nice sweet and tart dimension to salads. This salad is
colorful and full of lots of healthy veggies. Sweet, Savory and Delicious. A
salad that is good to you and good for you!
The Strawberry Vanilla Vinaigrette
adds another layer of flavor to the salad. Whenever I get the
opportunity, I love to make my own salad dressings. They are surprisingly easy
to make and keep in the refrigerator for weeks. Homemade salad dressing,
Trumps anything you can buy from a bottle
Strawberry Shrimp Salad with Strawberry Vanilla Vinaigrette
Salad Ingredients
Approximately
5 oz mixed baby greens washed and dry (spring mix)
Approximately
5 oz romaine lettuce
5 oz. Feta
Cheese
1 Pint
Strawberries washed and sliced
Candied
Walnuts (the Trader Joes brand is awesome)
Cooked
Shrimp
Combine
salad greens Feta Cheese and Strawberries. Sprinkle with
camdied
walnuts and place cooked shrimp on top of salad greens.
Strawberry
Vanilla Vinaigrette
1 cup
olive oil
2
tablespoons white wine vinegar
1/2 pint
fresh strawberries halved
1/2 teaspoon
salt
1/2
teaspoon pepper
1/4
teaspoon dried Tarragon
1 teaspoon
Vanilla
1
Tablespoon sugar
In a
blender or food processor, mix olive oil, strawberries, white wine vinegar,
salt, pepper, Tarragon and sugar. Blend until smooth. Toss Salad greens
with vinaigrette.
